Method
Cook pasta as per manufacturers instructions. Cool and drain.
Place mayonnaise, yoghurt, tomato ketchup, pepper and lemon juice in a bowl and mix.
Add pasta, diced tomatoes, finely chopped spring onions and prawns and mix together
Place prawn salad on top of shredded lettuce and sliced cucumber
Garnish with paprika.
Wrap with cling film.
Keep refrigerated until service time.
Salads
