Parboiling the parsnips first will help prevent dry or chewy parsnips. To parboil, put whole or halved parsnips in boiling water and cook for 8 minutes or until slightly tender.
Preheat the oven to: 200ºC/180ºC fan/gas 5 Line a roasting pan with foil and drizzle with olive oil.
Place in the hot oven to heat the oil. Toss the prepared parsnips in the roasting pan and fully coat them with oil.
Ensure to spread the vegetable chunks evenly in the roasting pan, so they all have a chance to go crispy.
